*Be sure to mix the soda with the flour, which needs to be sifted 3 times. Pans need to be greased, with wax paper cut to the fit the bottom of the pan. The wax paper needs to be greased also.
Ingredients
1 1/2 cup sugar
2 cups sifted self-rising flour
1 tsp. soda
1 cup mashed banana
1 tsp. vanilla
1/2 cup butter (1 stick)
2 eggs
4 Tbsp. buttermilk
1/2 cup chopped pecans
Cream butter and sugar until light and fluffy. Add the well beaten eggs; mix well with sugar and butter. Stir in the banana which has been mashed real well. Add the flour which has been sifted three times with soda, alternating with milk. Add nuts and vanilla. Bake in three 9 inch pans for 25 to 30 minutes in a 350 oven. Line pans with greased wax paper for best results.
Filling/Frosting
1/2 cup butter (1 stick)
1 box confectioners powdered sugar
1/2 cup mashed banana
1 cup chopped pecans
1 tsp. vanilla
Mix butter, banana and sugar. Add nuts and vanilla.
