I've been making mashed potatoes for years- boil potatoes, add milk, butter, and voila! Mashed potatoes. Sometimes I've experimented and added, cream cheese! Or mayo! Good, but not great. Until now!
Here's the secret: after boiling the potatoes, add them back to the pot, over low heat and let all the steam get out of the pot. When you reheat them the next day-they are just as creamy as when they were made. Our Thanksgiving was saved this year-thanks to one less dish to make on Thanksgiving day! I followed Pioneer Woman's recipe to a T and they came out so good.
