Chocolate Chip Cookies

My friend Mandy taught me to let the butter sit on the counter to soften, instead of melting it. The butter needs to be soft enough to make an indent, so it could take 6 hours or longer to sit on the counter to soften. My friend taught me to really mix the white and brown sugars together thoroughly. She also taught me that the cookies taste better on the second day, so you could make them on the first day and take them to friends on the second day.

Another friend Lisa who also makes delicious chocolate chip cookies taught me the importance of taking the cookies out when you see the edges of the cookies just starting to brown. Take them out before they are fully done and let them sit on the pan for a few minutes to finish cooking. Also, use a good really good vanilla (like Mexican vanilla) in your cookies, double the amount of vanilla, and use the mini chocolate chips.

Life is better with thoughtful friends and also chocolate chip cookies.
