The secret to these cookies is the pumpkin spice mix. I made it myself and I would definitely recommend anyone else that tries this recipe to do the same.
I used this recipe for the pumpkin pie spice mix. I only had cinnamon, ginger, and nutmeg on hand so that's what I used.
Tweaks I made to the recipe:
Also, I used 2 sticks of butter instead of 1 1/2 sticks in the cookie mixture.
I doubled the vanilla in the cookie mix.
I used a small cookie scoop
